Mold persists, but I don't see it. How can I find the problem?

I had a water leak in a wall during some bad rains some time ago. There is a planter up against the stucco, and the planter filled with water and it eventually leaked. The carpet was wet.
I dried the carpet and pad with fans, and I thought the problem was resolved, however later I found moldy appearance on the drywall.
I tore out the drywall and found mold on the studs and the back of the drywall. I sprayed bleach on it and ran fans, after a few days the mold seemed gone. I replaced the drywall. I resealed the stucco on the outside with some Henry 208 put on thick with a trowel.
I have been having increasing resperatory symptoms, so I started looking again. There is no obvious sign of mold in the original area.
There is another room adjacent that I spend a lot of time in. It is also by the planter, and I had a small water leak there in the past. Carpet got wet and was dried.
I thought that might have a similar problem. I used a hole saw and made 2" holes between the two studs nearest the the original problem, looked, it all seems dry and free of any mold.
There are some stains on the carpet pad, I put a lot of bleach on it. I cleaned the carpet.
How should I look for the problem if it is actually mold? I just don't see it.

Well, I don't know what to test. I am pretty sure there was/is mold. I am pretty sure I have gotten rid of it mostly. If there were overt signs of mold other than below I would have established it's presence.
But the thing is, I had a "sour" odor on the back of the carpet. I sprayed lysol on it, that didn't really do anything except mask it with a pleasant odor. Bleach in a spray bottle didn't seem to hurt it much.
So I took a steamer to it, one of those you see all over "Eurosteamer". That seemed to get it loosened up and took away the sour smell. I have had fans running for a few days to dry it all out.
So the sour smell is presently gone.
But a generalized mold infestation problem, spores, etc. I don't know what to do about that.

By the way! Zymo forms a enzymatic barrier that will keep the mold from returning.
