Liquid coatings are dangourous on countertops in terms of the way they may or may not perform. The wood must be very stable. The coating can crack and if it starts the game is over. The more coats the better it will perform against things like movement, hot pots, etc.. A hot pot for example may discolour the wood right thru the coating if there isn't enough coating to dissipate the heat quickly enough. Usually when you see tables or counters coated with epoxy, it is quite thick. Coatings are not as resistant to scratching as Formica, tile or marble.
