I just purchased a home and the master bedroom has shelving built into the walls. the shelving is some kind of plastic laminate that has the appearance of wood. It is very light in color and it looks terrible next to my dark cherry furniture. I am wondering if I can stain it to better match the cherry or just paint it the same color as the walls. Can this be done?

Sounds like these shelves could have formica or possibly melamine surfaces. These are like plastic which can't be stained but you could consider paint. Sand with a light sand paper to remove any shine then use a good alkyd primer. Now you can paint with almost any kind of paint, even one that looks like stain when it goes on. Your local paint store should have these or any home improvement center.
